Classic Deep Fried Walleye Recipe

DESCRIPTION

Simply the best way to cook walleye! Don’t be afraid of the “deep fried” fish – the hot oil actually seals the breading resulting in less fat per fillet than the pan-fried method. This fish is crunchy on the outside, tender on the inside.

INGREDIENTS

  • 12 fresh walleye fillets
  • 2 eggs
  • 2 bags saltine crackers
  • 1 electric fryer filled with hot vegetable oil (Crisco)

DIRECTIONS

Pour crackers into a large zip-lock bag and crush finely with a rolling pin, but not quite to a powder stage as would happen in a blender.

Dip fillets into beaten eggs and drop 4 fillets at a time into bag of crackers and shake to coat. Drop 4 fillets into hot oil, cook for 3-5 minutes or until they float and are golden brown. Continue until all fillets are cooked.

That’s it! Salt and pepper to taste and serve with tarter sauce if desired.
