Instant Pot Garlic Potatoes Recipe

This is a quick and easy side dish recipe that goes with many meals, including fish, chicken, or beef.

INGREDIENTS

  • 1 1/2 to 2 pounds of potatoes
  • 1/4 cup olive oil (or avocado oil)
  • 1 teaspoon salt or sea salt
  • 4 cloves crushed garlic
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1 cup vegetable or chicken broth

DIRECTIONS

Wash the potatoes and then cut into 1 to 2 inch pieces. Set your multi-function pressure cooker (such as an Instant Pot(R)) to saute mode and add the oil. Once heated, add the potatoes, salt, and crushed garlic. Cook for 5 to 10 minutes, stirring frequently.

Sprinkle garlic powder, thyme, rosemary, and black pepper on the potatoes. Pour in the vegetable broth, close and lock the lid. Select the high pressure setting and set the timer to 7 minutes. It will take 10 to 15 minutes to build up pressure, then it will count down for the 7 minutes.

Once complete, carefully release the pressure using the quick-release method.
