DESCRIPTION
Crispy, moist, and great cold
ADVERTISEMENT
- 1 chicken cut into 8 pieces
- 2 teaspoons each onion & garlic powder
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper or red pepper flakes
- 1 1/2 cups flour
- 2 eggs, beaten
- oil for frying
DIRECTIONS
Wash and dry chicken pieces. Mix all spices together and sprinkle on all sides of chicken. Allow chicken to rest on wire rack for 10 minutes.
Dip chicken in egg , shaking off excess. Dredge in flour and place on wire rack for another 10 minutes.
While chicken is resting heat oil in pan to 350 degrees F.
Once hot, fry chicken for 20-30 minutes, flipping as needed until done. Make a cut near the thigh bone to see if cooked through.
Do not overcrowd in pan or will take longer to cook and become gummy. May need two pans or make in 2 batches.
