DESCRIPTION
Can use fresh or leftover chicken breast or thighs, and any veggies you have on hand.

- 2 cups chicken, cut into bite sized pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 1 1/2 cups chicken or vegetable stock
- 2 cups fresh or frozen veggies
- left over rice or noodles if desired
- salt & pepper to taste
DIRECTIONS
On medium-high heat, saute onions and garlic until you can smell the garlic.
Add cut up chicken. Allow to brown on all sides. Add mushrooms and chicken stock, simmer until chicken is about cooked through. If chicken is fresh, add veggies asparagus, peas, broccoli, snow peas, zucchini, etc. If chicken has already been cooked, add veggies right away.
Saute in broth until chicken is cooked or warmed through.
Serve with leftover wild rice (my favorite) or noodles, or as it is.
