DESCRIPTION
This is a very tasty soup, a “can’t miss” combination of ingredients that allows for variations in flavor and thickness depending on how long you simmer it.
- 1/2 ham with bone
- 1 – 16 ounce package dried split peas
- 1 bay leaf
- 4 cubes chicken bouillon
- 1 medium onion chopped
- 2 stalks celery
- 2 peeled and chopped carrots
- pepper to taste
DIRECTIONS
Carve 2/3rds of the meat off the ham bone. Place ham bone in 6 quart pan with bag of peas. Cover with water; add bay leaf and bouillon. Simmer for 1 to 1 1/2 hours. Add onion, celery and carrots and simmer for another two hours, more or less. Take the ham bone out, cut chunks to put back in the soup. Pepper to taste.
Everyone loves this simple, easy to make soup. We usually make scalloped potatoes with ham at the same time, and save the best carvings for sandwiches.
Optional: Use smoked pork hocks instead of ham bone for smoky flavor.
