DESCRIPTION
Use 12 inch Dutch oven.
- 4 tablespoons butter
- 1 cup brown sugar
- 8 pineapple rings
- 8 maraschino cherries
- 1 package yellow cake mix
- 1 cup pineapple juice
- 1/3 cup water
- 3 eggs
- 1/3 cup oil
- 1 – 16×16 inch piece of parchment paper
DIRECTIONS
Melt the butter in the Dutch oven with 10 coals on the bottom. Sprinkle the brown sugar evenly in the oven. Carefully place the pineapple rings on top in a circle with one in the center. Place a cherry in the center of each ring. Combine the cake mix, pineapple juice, water, eggs and oil and mix well. Carefully spread the batter on the rings, cover and bake at 350 degrees F for 40-50 minutes. Open the lid and let it cool for 10 minutes. Run a rubber spatula around the outside edge. Place a piece of parchment paper on top and replace the lid. Turn the oven upside down on a lid stand or large rocks to hold it in place. Tap the oven and life it off the lid. Slide the parchment paper off the lid.
