DESCRIPTION

This is a favorite family recipe. These pancakes always turn out great and they are easy to make. You won’t ever use pancakes from a box again, except when you’re camping. Of course, pancakes always taste best with a little butter and pure maple syrup.

INGREDIENTS

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 1/2 cups milk
  • 2 tablespoons packed brown sugar
  • 4 tablespoons vegetable oil
  • 6 teaspoons baking powder
  • 1/2 teaspoon salt

DIRECTIONS

1. Beat eggs with fork in a medium bowl.
2. Beat in remaining ingredients until smooth.
3. Heat electric frying pan (griddle) or skillet over medium heat or to 375 degrees F.
4. Spray pan with non-stick spray or use a little butter.
5. To test to see if it’s hot enough, sprinkle a few drops of water on the griddle. If they turn to bubbles and disappear almost immediately, the heat is just right.
6. For each pancake, pour 1/4 to 1/2 cup batter onto hot griddle. Cook pancakes until puffed, are steaming, and have just stopped bubbling. Lift up the edge to check bottom before flipping. The underside should be golden brown. Turn and cook other side.
