French Onion Soup

INGREDIENTS

  • 1/2 cup butter
  • 8 cups thinly sliced onions
  • 1 1/2 teaspoons salt
  • 3 tablespoons all purpose flour
  • 8 cups basic beef stock
  • 6 to 8 slices French bread cut in 1/2 inch slices
  • 6 to 8 thin slices Swiss cheese
  • freshly ground pepper to taste

DIRECTIONS

Melt butter in large, heavy kettle over medium heat. Add onions, salt and cook over low heat stirring frequently for about 20 minutes or until onions are golden brown. Sprinkle the flour over the onions and stir until well blended. Remove from heat. Pour stock into a large saucepan and bring to a boil over high heat. Stir into onion mixture and mix well. Reduce the heat and cover. Simmer for 40 minutes, skimming off excess fat occasionally, then season with pepper and salt to taste.
Cut the bread in crouton-size pieces and place in ovenproof bowl. Cover the bread pieces with 1 slice of cheese & put under broiler about 8 inches from heat and broil for 2 minutes or until cheese is golden brown. Serve immediately.
