Wild Rice Soup Recipe

INGREDIENTS

  • 1 pint half-and-half or milk
  • 2 – 10 ounce cans cream of potato soup
  • 8 slices bacon, fried crisp
  • 1 medium onion, diced
  • 1 1/2 cups grated American cheese
  • 2 heaping cups cooked wild rice
  • 1/2 cup or more diced ham
  • 1/2 teaspoon parsley flakes
  • 1/8 teaspoon pepper

DIRECTIONS

Simmer soup, milk (or half & half), water, bacon, cheese, cooked rice, ham, parsley and pepper. Saute onion in bacon fat. Continue to stir the soup so it doesn’t burn. (Fresh potatoes can be used.) Just peel 4 raw potatoes, dice them, boil, them and add to the soup. Enjoy.
