- 8 pork chops
- 1/2 cup brown sugar
- 2 tablespoons soy sauce
- 1/4 cup wine vinegar
- 1/4 cup combined fruit juice and pickle juices
- 1 medium onion, sliced
- 4 stalks celery, cut diagonally into pieces
- 1 bell pepper, sliced
DIRECTIONS
Arrange pork chops in roaster. Sprinkle over chops the mixture of brown sugar, soy sauce, vinegar and juice. Bake, covered, at 225 degrees F for 1 hour, then 400 degrees F for 1/2 hour. Pour off juices into separate pan and thicken with cornstarch (about 1 teaspoon or more) for gravy. Cut vegetables in large pieces. Simmer the onions and celery in a little water for 15 minutes. Add the peppers and simmer an additional 5 to 7 minutes. Add butter, pepper and soy sauce to flavor. Serve with rice and a platter of fresh fruit.
