DESCRIPTION
A special treat for your overnight company.
- 12 slices day old white bread, crusts removed
- 1 1/2 package cream cheese (12 ounces) cut in cubes
- 1 1/2 cups blueberries (fresh or frozen)
- 12 eggs
- 2 cups milk
- 1/3 cup maple syrup or honey
Sauce:
- 1 cup sugar
- 1 cup water
- 1 tablespoon butter
- 2 tablespoons cornstarch
- 1 cup blueberries
DIRECTIONS
Cut bread into cubes. Put 1/2 in a greased 9×13 inch pan. Place cream cheese cubes over bread. Top with blueberries, then the other half of the bread. In a large bowl, beat eggs. Add milk and syrup and mix well. Pour over bread mixture. Cover and chill at least 8 hours. Remove from refrigerator 1/2 hour before baking. Cover and bake at 350 degrees F for 25 minutes. Remove cover and bake another 25 minutes. Serve with hot sauce shown below.
SAUCE: In saucepan mix sugar and cornstarch. Add water. Bring to a boil and boil 3 minutes, stirring constantly. Stir in blueberries. Reduce heat and simmer 8 minutes or until berries burst. Stir in butter until melted.
