DESCRIPTION
These are easy to make and always a hit.
- 1 box manicotti shells
- 1 pound bulk Italian sausage
- 1 green pepper chopped
- 1 yellow onion chopped
- 16 ounces ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 egg
- 1 tablespoon Italian seasoning
- 1 jar spaghetti sauce
DIRECTIONS
1) Cook manicotti shells in boiling water for 4 minutes. (They’ll finish cooking while they bake). Saute the sausage, peppers and onions together until cooked through. Drain and let cool for a few minutes in the refrigerator.
2) Mix the ricotta cheese, 1 1/2 cups of the mozzarella cheese, egg and Italian seasoning. Combine it with the sausage mixture once it’s cool.
3) Spread a thin coating of spaghetti sauce in bottom of a 9×13 inch pan. Stuff the mixture into each of the manicotti shells with a spoon and place them in the pan. Pour the rest of the spaghetti sauce over the top and sprinkle with remaining mozzarella cheese. Bake at 350 degrees F for 30-40 minutes.
