Fried Chicken

This was Jerry Menke’s favorite chicken.

INGREDIENTS

  • 3 – 3 1/2 pounds cut-up chicken
  • 2 cup buttermilk
  • parsley
  • salt
  • thyme
  • basil
  • pepper
  • flour
  • 1/4 cup Crisco
  • 1/4 cup butter
  • 1/4 cup chicken broth

DIRECTIONS

Marinate chicken pieces in one cup buttermilk in a Ziploc bag for 2 or more hours in refrigerator. I remove all of the skip of the chicken and use powdered buttermilk in a can.

Put chicken in the sink to drain. In the sink, season chicken with parsley, salt, thyme, basil, pepper, and whatever. Roll chicken in flour and shake it. In an electric pan, heat Crisco and butter and brown chicken at 350 degrees F. Put one cup of buttermilk in a 9×13 inch pan or larger and put in chicken. Add chicken broth in the skillet and heat. Then strain and put brownings over the chicken.

Bake uncovered at 375 degrees F for about 1 hour, until crisp.
