Best Christmas Cookies Recipe

INGREDIENTS

  • 3 3/4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • sprinkles (optional)

Frosting:

  • 2 cups powdered sugar
  • 1/4 cup shortening
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • food coloring (optional)

DIRECTIONS

In medium bowl, mix flour, salt, and baking powder together. In a separate large bowl, mix softened butter and sugar. Beat eggs in separate bowl and add gradually to large bowl while stirring. Stir in the vanilla. Gradually blend in flour, salt, and baking powder mixture until fully mixed. Cover and chill for 30 minutes.

Preheat oven to 400 degrees F. On floured surface, roll out small portions of chilled dough to 1/4 inch thickness. Keep remaining portion in refrigerator as you pull out small portions. Cut out shapes using cookie cutters or free hand with a knife. Place on greased cookie sheet, leaving at least 1/4 inch between cookies. If you are not going to frost your cookies, you can add colored sprinkles to the cookies before cooking.

Bake 6 to 8 minutes in preheated oven, or until edges are start to turn brown. Remove immediately from cookie sheet to cool on wire rack or on aluminum foil.

Frosting:
Once your cookies have cooled, you may frost them.

In medium bowl, mix together the sugar and shortening until smooth. Add in the milk and vanilla and mix until stiff. An electric mixer works best for about 5 minutes. Add a teaspoon more of milk if the frosting is too thick.

If desired, add a drop of food coloring. To have multiple colors, divide into separate bowls before adding food coloring. Add more drops to darken the color.
