DESCRIPTION
“Wow, what is this salad, I asked.” It tastes so very refreshing! It’s Tabouli, she answered, & gave me the recipe. I’ll surely add the optional mint leaves because they grow in my garden.

- 1 1/4 cup bulgar wheat
- 4 cups boiling water
- 1/4 cup olive oil
- 1/2 cup fresh-squeezed lemon juice
- 1 cup fresh parsley, chopped
- 3/4 cup chopped scallions or onions
- 3 medium tomatoes, chopped
- pepper to taste
Optional:
- 3/4 cup cooked white beans, drained
- 1/2 cup freshly chopped mint leaves
- 2 small cucumbers, chopped
- 2 stalks celery, chopped
DIRECTIONS
1. Pour water over wheat and let stand at least two hours.
2. Squeeze out excess water with hands or strainer & spoon.
3. Add remaining ingredients and thoroughly mix together.
