- 3/4 cup sugar
- 1/2 cup Bisquick
- 2 tablespoons margarine or butter
- 1 – 13 ounce can evaporated milk
- 2 eggs
- 1 – 16 ounce can pumpkin
- 2 1/2 teaspoons pumpkin pie spice
- 2 teaspoons vanilla
DIRECTIONS
Grease a 9 or 10 inch pie plate. Heat oven to 350 degrees F. Beat sugar, Bisquick, evaporated milk, margarine, eggs, pumpkin, pumpkin pie spice and vanilla in blender or two minutes on high with hand mixer. Pour into pie tin and bake 50-55 minutes until knife comes out clean. Serve with cool whip or whipped cream.
