I&#8217;ll surely add the optional mint leaves because they grow in my garden.</p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>INGREDIENTS</strong></p>\n\n\n\n<ul><li>1 1/4 cup  bulgar wheat</li><li>4 cups  boiling water</li><li>1/4 cup  olive oil</li><li>1/2 cup  fresh-squeezed lemon juice</li><li>1 cup  fresh parsley, chopped</li><li>3/4 cup  chopped scallions or onions</li><li>3  medium tomatoes, chopped</li><li>pepper to taste</li></ul>\n\n\n\n<p><strong><em>Optional:</em></strong>  </p>\n\n\n\n<ul><li>3/4 cup  cooked white beans, drained</li><li>1/2 cup  freshly chopped mint leaves</li><li>2  small cucumbers, chopped</li><li>2  stalks celery, chopped</li></ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>DIRECTIONS</strong></p>\n\n\n\n<p>1. Pour water over wheat and let stand at least two hours.  <br>2. Squeeze out excess water with hands or strainer &amp; spoon.<br>3.
