Freezes well</p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>INGREDIENTS</strong></p>\n\n\n\n<ul><li>3 carrots, chopped</li><li>2 large potatoes, diced</li><li>1 large onion, diced</li><li>4 ribs celery, sliced (with tops for flavor)</li><li>1 head cabbage, coarsely shredded (3 cups)</li><li>1-2 pounds ground beef</li><li>2 teaspoons salt</li><li>1 teaspoon freshly ground pepper</li><li>1 quart tomato juice</li></ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>DIRECTIONS</strong></p>\n\n\n\n<p>Combine carrots, potatoes, onion, celery, cabbage, ground beef, salt and pepper in large stock pot and add enough water to cover.  Add tomato juice.  Bring to boil, then lower heat and simmer at least 1 hour until meat is cooked and veggies are tender.  Stir occasionally to break up meat.  Skim off fat and taste for seasoning.</p>\n\n\n\n<p>If desired, add a little red pepper seasoning.</p>\n\n\n\n<p></p>\n\n\n\n<p></p>\n\n","title":"Beefy Vegetable Soup Recipe","date":"January 01, 2019","categories":{"nodes":[{"uri":"/recipes/view/category/soups/","name":"Soups"}]},"featuredImage":null}},"pageContext":{"id":"cG9zdDo4NTM="}},
